Oatmeal banana split

Inspired by my lifelong love of porridge and banana splits. This dish happens to be vegan which I think is better for any oat-lover as oat milk/ yogurt is substituted for diary. I have tried hundreds of iterations of this dish using my wife as chief taster, I believe this one finally makes the grade to win the Golden Spurtle.

Ingredients
• 75g fine oatmeal
• 200ml oat milk
• 100ml water
• 20g golden syrup
• 20g 100% peanut butter
• 5g pure cacao powder
• Pinch of cinnamon
• Pinch of salt
• Dash of vanilla essence
• 1 x medium banana
• Sprinkle of cacao nibs
• Sprinkle of crushed peanuts
• Sprinkle of desiccated coconut
• 1 x cherry
• Dollop of Oatly yogurt

Preparation

1. Combine oat milk and water in a pan. Bring to a medium heat, during the process add golden syrup, peanut butter, cacao power, cinnamon and salt. Stir to a smooth consistency;
2. When pan is hot and ingredients fully combined, add oatmeal and a dash of vanilla. Stir constantly for a further 2 minutes until oatmeal is evenly coated;
3. Set aside and cover for 5 minutes
4. When ready to serve, cut the banana in half and arrange in bowl. Pour oatmeal. Add a dollop of yogurt and sprinkle with cacao nibs, peanuts, desiccated coconut. Add a cherry on top.
