Honey, Oat & Raspberry Sponge

75g Butter
60g Soft Brown Sugar
25g Honey
1/2 tsp Vanilla Essence
1 Egg
80g Self Raising Flour
30g Oats
60g Raspberries

Vanilla Pinhead Oat Ice Cream

75g Pinhead Oatmeal
1 cup of Granulated Sugar
¼ cup of Water
500g Vanilla Ice Cream   + 500g Chocolate Ice Cream

Meringue

4 egg whites
175g caster sugar
Pinch of Cream of Tartar
